Soufflé pancakes are the Japanese creation that’s been making waves for defying pastry physics with their airy cloud-like texture, and we can’t brush aside how Instagram-worthy they look either. Here’s our curated list of places in Singapore that serves this delectable treat – just don’t blame us if you get a sugar overdose!
Antoinette
The brand new collection of five soufflé pancakes at Antoinette isn’t just sweet but savoury too. Incredibly light and fluffy, selections include the Trés Berries ($16++), a classic offering of berries and pancakes, as well as the local-inspired Ondeh Ondeh ($16++) – an ode to the beloved Singapore kueh dressed with pandan custard and gula melaka syrup. The savoury end of things sees pancakes stacked with creamy mushroom sauce and a side of omelette in the Forestiere ($16++).

Gram Cafe & Pancakes
Finally, the highly-anticipated King of soufflé pancakes (yes, we’re dubbing the store as such) has descended on our shores. As the undisputed leader of the Japanese pancake industry, Gram Cafe doesn’t disappoint when it comes to these fluffy goodness. Take note of the timings 11am, 3pm and 6pm, as their signature Premium Pancakes ($17.90++) are only prepared in batches of 30 at these times.

Belle-Ville Pancake Cafe
Singapore should feel blessed that the renowned Belle-Ville Pancake Cafe from Osaka has chosen the city for its first-ever international outlet. Boasting a rich history (they originated in 1958) of making soufflé pancakes, you know that their treats are hella good, and the long queues are a testament to that. If you want to play it safe, drizzle maple syrup onto the basic buttercream Millefeuille Pancake ($7.90/four, $11.90/8 eight). Or opt for the Strawberry & Mixed Berry Pancake ($11.90) for an instant show-stopper.

Cafe De Nicole’s Flower
Everything about Cafe De Nicole’s Flower screams aesthetic. From its vintage interior to the floral-themed food decorations, it’s no wonder that many people flock to this cafe slash florist for a photoshoot session. Take your pick of either Original, Matcha or Tiramisu flavours for their Soufflé Pancakes ($15.90 to $19.90), topped off with a heaving scoop of coconut ice-cream for a burst of refreshment. The pancakes here may not be towering, pets are allowed in the premises so we’re willing to close our eyes on that point.

Hoshino Coffee
Hoshino Coffee wins a spot in our hearts for being one of the first cafes to introduce soufflé pancakes to the local crowd. Their Pancake Souffle Style ($9.80) is moist and warm on the inside and drizzled with your choice of either maple or honey syrup. Coat it with their homemade whipped salted butter, and an explosion of sweet and salty flavours will incite your taste buds. If you feel like changing it up a little, the Matcha Pancake ($13.50) is a filling alternative for some tea-time indulgence.

Kyushu Pancake Cafe
Kyushu Pancake prides itself in promising that quality is never a concern. Why? It’s because all their ingredients are carefully-sourced from around Japan, and free of chemicals and other toxics – think unfertilised wheat from Oita Prefecture and raw sugar from Okinawa. Perfect for those embracing the organic movement! As its name suggests, the Kyushu Good Ol’Classic ($7.90) won’t go wrong as you dip into their white wine honey and fruit syrup, then finish it off with whipped cream.

Miam Miam
What do you get when you combine Japanese fare with French cooking techniques? Miam Miam. Don’t leave the store without ordering their Truffle Chocolate Pancake ($13.80), which is an epitome of chocolate heaven, or the Hojicha Pancake ($13.80), if you have a soft spot for Japanese flavours. Garnished with Hojicha whipped cream, the soufflé pancake is served with soybean dango balls and adzuki beans.
Miam Miam is located at Westgate and Bugis Junction. Open Mon-Fri 11.30am – 10pm, Sat-Sun 11am – 10pm.
Riz Labo Kitchen
Instead of the tall, firm appearance that we’ve associated with soufflé pancakes, the ones at Riz Labo lean towards the droopier side – somewhat reminiscent of an English breakfast muffin. Signatures include the Premium Chocolate Pancake ($18) and you guess it, Matcha Pancake ($18). If you’re lucky enough, you might be able to score their exclusive Strawberry Berry Ice Cream Kawaii ($20), limited to just 10 servings per day. It’s plated alongside strawberry ice cream, making this the ideal dessert to cool off with.

SweeT.Rex
We’re ending on a good note by presenting to you with $1.50 soufflé pancakes. Yes, you heard that right. At such an affordable price, don’t expect any frills as the food sold here is all about the classics. Decide on your sauce of choice – be it chocolate, strawberry or caramel, and dribble it onto piping hot pancakes. The store is tucked away in Alexandra Village Food Centre, and it’s a hidden gem among the lunch crowd.
