Happening 19 June 2016, you can (obviously) expect free-flow Dom Pérignon, wines, and spirits the obliging service team will happily supply, as well as unparalleled vistas of Singapore island.
Food-wise, look forward to a fresh array of succulent seafood – think Boston lobsters, three types of international oysters, and live prawns, enticingly complemented with ocean fresh sashimi, from tuna and salmon to hokkigai (surf clam), hamachi (Japanese amberjack), and take (octopus).
And that’s just the beginning! The Dom Pérignon Platinum Brunch gastronomical indulgences extends beyond the restaurant to its private dining rooms, each one boasting a live station themed around the characteristics of wine: sensuality, minerality, complexity, and texture – carefully executed and prepared by Chef de Cuisine Paul Hallett and his culinary team.
At Kaviari’s caviar bar, taste watermelon with Sevruga caviar, Wagyu tartare with Baeri royal caviar, and sea urchin with Oscietra caviar as they complement the generous minerality and acidity of Dom Pérignon (each bottle interpreting the unique character of the season).
The Burrata bar is accompanied by dishes such as seared sea bass and lobster, with compressed watermelon infused with olive oil caviar and jelly, exuding silky textures and absolute sensuality. The more carnivorous of you lot can indulge in the Iberico ham live carving station, accented by fruity aromas from the melon, sun-dried tomato pesto, and basil cream for a lingering finish.
Head on to the Parmesan cheese live station – which embodies the characteristic of ‘texture’ – with its showcase of baked Scottish salmon with Parmesan crust and Dom Pérignon champagne sauce, or the Spider Crab station to feast on steamed crab with various condiments, and chilli crab with everyone’s favourite steamed buns.
At last, end off your delightful culinary journey with unusual desserts of open face black sesame matcha macaroons, olive oil sponge cake with Cremeux, deep-fried coconut semi-credo popsicle, and tropical snowy cream in Martini glass. Cocktail fans can also count on the presence of Bacardi Legacy Singapore 2016 Champion Bannie Kang, who will be shaking up her special signatures.
