Hello May, and hello all you new restaurants and bars in Singapore. This month, we see untapped cuisines in the form of Panamericana and Monte Carlo Boys, a new natural wine spot that is Le Bon Funk, as well as fresh concepts from industry celebrities Alan Yau and Woo Wai Leong.
New Restaurants in Singapore
Panamericana
Panamericana at the scenic Sentosa Golf Club is a bold bar-grill that draws from the rich cuisine found along the Panamerican Highway. Led by veteran bar consultant Julian Serna and Executive Chef Mathew Woon (The Loco Group), what you get are signature ‘farm-to-fire’ magic of succulent grilled meats, seafood, and regional street eats – Salt Baked Trout, Beef Empanadas, British Colombia Salad, and the like. And they do some pretty darn good tipples as well.

Ta-Da! The Bistro
Caviar, ebiko, and wagyu beef at highly accessible prices? Yes, please. Helmed by Mr Ta Da, who’s been trained in France and hailing from the kitchen of Joël Robuchon, this new bistro is all about gourmet delicacies such as the Seaweed & Caviar Cold Pasta ($16), Iberico Pork ($23.90), and the unique Basilic Chips ($10) with its fluffy texture and gnocchi-like shape.

The Stamford Brasserie
Adding on to Swissôtel The Stamford’s repertoire of dining concepts is The Stamford Brasserie, a stylish tri-concept outfit with an all-day dining restaurant, beer bar, and a convenient Grab-and-Go. Expect communal snacks like the Peruvian-style Rice Crackers ($6), Butcher’s Meat Boards ($26) for sharing, and mains such as the Spiced Chicken Kebab ($19) and Baked Fish ‘En Papillote’ ($20). This is also the hotel’s first F&B spot to be run completely plastic-free, which is a great boon in our books.

Le Bon Funk
Welcome to Le Bon Funk, where natural wines are what it’s all about. This cosy and friendly joint along the ever-bustling Club Street boasts an ever-growing wine list that prioritises winemakers over wine regions and leisure over labels, curated by Head Sommelier Josée Yeomans. Just as the drinks are good, you won’t want to miss out on Chef-Owner and Burnt Ends alumnus Keirin Buck’s house-cured charcuterie and repertoire of contemporary fine plates.

Madame Fan
Dining at Alan Yau’s new Madame Fan is like stepping into a renaissance world of old-world Chinese elements. Every creation from the exquisite Cantonese menu is a delectable piece of art, whether it’s his Crispy Aromatic Duck ($38) done Peking style, Jasmine Tea Smoked Ribs ($35) or dim sum items like the Sri Lankan Mud Crab Wonton and Fried Duck & Pumpkin Puff. As expected from the famed restaurateur.

Restaurant Ibid
It’s not every day that you get to try the cooking of a MasterChef winner, unless of course, you’re at Restaurant Ibid, the very first concept by Woo Wai Leong of MasterChef Asia fame. This is where the Singaporean combines Nanyang-style contemporary Chinese sensibilities with his Western culinary training, giving birth to anything from a Spring Onion Shao Bing with yeasted butter to an Egg Yolk Jam dish with onion soubise in tea broth, and Soy Bean Ice Cream served with toasted sesame and Sarawak pepper.

The Spot
The Spot is a multi-concept place where things are complex, yet not complicated. Gunther’s
The name Gunther’s might not be new, but its interior and menu is. After several months of renovations, the Modern French restaurant we all know and love has reopened with the same spirit of the Art Nouveau, bringing you a collection of timeless dishes like the Roasted Suckling Pig in Hibiscus sauce, Alaskan King Crab, and Cold Angel Hair Pasta done four ways: with Oscietra caviar, fresh uni, black truffle, and white truffle.

New Bars in Singapore
Monte Carlo Boys
Go big or go home – and that’s exactly what the trio of William, Anthony, and Julien did when they brought the drinking culture and vibes of Monaco to Singapore. This industrial-chic lounge right at the fringe of Club Street will showcase their very own brand of homemade Monaco Beer and an array of Moenegasque dining delicacies you won’t find anywhere else. And we haven’t even mentioned their spankin’ good cocktails (margaritas and pizza, anyone?) and spirits on hand.

American Taproom
In case you haven’t heard about it, 32 is the big new number on the block. That’s 32 beautiful taps bringing you the finest craft beers from America and the rest of the world to you. This week, it might be the Transpacific Pale Ale from Australia’s Pirate Life Brewing and the next, the Arrogant Bastard Strong Ale by Arrogant Brewing in California. Whichever the case, they’re always waiting to pour you that first pint, and surely some good ol’ American comfort grub won’t go wrong either.
