Singapore’s dining scene shows no signs of slowing, and this November brings another wave of culinary newcomers worth bookmarking. From heritage-driven Eurasian fare and soulful skewer bars to udon flown in from Tokyo and stylish bistros with serious chef clout, these new restaurants are shaping the flavour of our city in bold, exciting ways. You’ll also find a mix of cafes and bars just opened in Singapore, offering everything from soft-serve nostalgia to highball-fuelled izakaya nights. Whether you’re chasing charcoal, noodles, or neighbourhood charm, here’s what’s fresh on the plate this month.
Curly’s
Part grocer, part eatery, and wholly devoted to nourishing the everyday, Curly’s is the latest from Ebb & Flow Group, and it’s reimagining how we shop, cook, and dine. Nestled in Dempsey Hill, this 8,000 sq ft space is anchored by a farm-forward market and an ingredient-driven dining experience. The shelves brim with sustainable produce sourced from across Asia and beyond, including first-to-market offerings like Moroccan amlou spreads and wagyu from Tanegashima. Curly’s Dining, meanwhile, delivers soulful dishes like Jeju abalone porridge, pork porchetta, and sake-steamed pipis. From smoothies echoing Erewhon’s cult blends to a veggie-forward cocktail list by June Baek, everything here is grounded in care, craft, and clean flavour.

Gilmore & Damian D’Silva
In the hallowed halls of the National Gallery, heritage finds a new home. Gilmore & Damian D’Silva is Chef Damian’s tribute to his grandfather and culinary roots, a refined Eurasian restaurant shaped by memory, migration, and meticulous craft. The menu revives 200-year-old Kristang recipes with modern finesse: Sey Bah (braised pork offal and squid), Grilled Tiger Prawns “Bostador”, and the festive Christmas Debal. It’s storytelling on a plate from coconut-steamed chicken soup to durian kueh bingka with Gula Melaka ice cream. Housed in the former Supreme Court, the interiors blend heirloom details and bespoke design, echoing warmth and reverence. It’s a soulful step forward for Singapore heritage cuisine.

MyX
Part restaurant, part community living room, MyX is the latest soulful concept by the Eleven Co. Group (behind MOXIE, SIRI HOUSE, and CUDO). Tucked into Chip Bee Gardens, it serves up “soulful comfort food” with flavours that riff on the American South and Latin America, think Wagyu tartare with ancho chilli, uni cavatelli, and black pepper roast chicken over chorizo-laced dirty rice. Brunch brings Cubanos and chilaquiles; drinks range from coconut-lychee spritzers to clarified mezcal cocktails. Beyond the plate, the space is home to a lending library, vinyl lounge, and rotating art gallery. It’s a neighbourhood hangout where the food feeds both body and spirit.

Charcoal-grilled mains steal the show, including Wagyu Picanha with Asian chimichurri and a rotating Grilled Fish of the Day flanked by house-made sambals. A primal ode to fire and flavour, STYXX is Chinatown’s newest grill bar and a bold sibling to Middle Eastern-Balkan gem Leila. This edgy newcomer dials up the heat with skewers kissed by open flame: chicken hearts, spicy merguez, layered beef kebabs, and even king crab legs, all served with house-made saluf flatbread and punchy mezze like black tahini and matbuha. The setting? Gritty, warm, and wired with urban energy. It’s a place to rip bread, pass plates, and share in the smoke. STYXX may nod to tradition, but its spirit is global, inclusive, and unmistakably modern.

Think Parisian bistro charm with Singaporean warmth, from house-made charcuterie to ‘buntut’ oxtail soup. Wine lovers can revel in a tap wall and tanks curated by award-winning sommelier Xavier Thuizat. It’s French comfort food reimagined, shared, and savoured without the pomp.

Every mix is churned fresh in-house, with Chef Paul’s signature precision. Warm churros, artisanal pastries, and fresh coffees round out the offering. Utterly slurpable strands served hot or cold, in dishes like the famed Carbonara Udon ($24), an East-meets-West bowl with bacon tempura and parmesan. Other signatures include Spicy Beef Shoyu Udon, Yuzu Wagyu Udon, and the indulgent Tempura Zaru Udon.
