While Singapore is littered with dining spots that offer a view of the city’s impressive skyline, the experience of dining atop the country’s natural hill is second to none. Alfresco dining, live music, and whimsical cocktails are just some of the things you can look forward to at Dusk Restaurant & Bar, which is situated 100 metres above sea level and surrounded by lush greenery on the peak of Mount Faber.
There are multiple ways to get to the summit, but the most scenic route (arguably) would be the cable car. Whether you depart from the Sentosa or Harbourfront station, you’ll be treated to a bird’s eye view of the Southern tip of Singapore before you reach your dining destination, where a feast and tasty cocktails await you. Executive Chef Kenny Yeo has conceptualised a new menu, incorporating his signature style that melds French techniques with some Asian influences.
If the view of the southern waterfront has you craving for seafood, then look no further than the Wine Poached Oysters (S$22++) and the Crab & Mango Stack (S$18++), both superb additions to the tapas menu. The former sees plump, seasonally sourced oysters poached in a beautiful reduction of herb-infused white wine sauce topped with salty pearls of ikura, while the latter is a generous helping of shredded crab meat is heaped atop a chopped salad of fresh mango, avocado, and tomato. A light drizzle of olive oil and tabasco sauce completes the delicate dish.
The Tiger Prawn Capellini (S$28++) is a popular favourite retained from the old menu, and it’s easy to see why. The marriage of rich and creamy shellfish with capellini lightly tossed in garlic butter and olive oil is wonderful, and the balance of flavours is evident in each and every bite. For a less carb-heavy main, try the Pan Seared Snapper (S$28++). Cooked to crispy golden perfection, the red snapper fillet rests on a bed of zesty mango salsa, crushed potatoes, and cress for a delightful, tropical entrée.
No convivial meal is complete without the tipples, and Dusk Restaurant & Bar has a new selection of crafted cocktails to accompany your evening. The low ABV Sunset Spritzer (S$16++), a refreshing, bubbly concoction of triple sec curaçao, passionfruit mix, and ice-cold mango sorbet.
Looking for something stronger? The Smoking Nitro Watermelon Margarita (S$16++) will satisfy. Crisp and fruity, the light sweetness of watermelon complements the grassy notes of the tequila, and the outcome is a margarita that’s familiar yet different.
To close the idyllic evening, savour the intense, passionate flavours of Dusk Till Dawn (S$16++). Gin, vodka, rum, tequila, and blue curaçao come together with lemon juice, peach syrup and cranberry juice for a strong, yet smooth tipple – and one that’s best sipped on while taking in the final breathtaking views of Dusk’s surroundings before returning to reality.
