Operation Dagger Launches Seasonal Menu Inspired By Travels
The new drinks menu at Operation Dagger dives into unchartered territory, quite literally, with inspiration from the travels of Head Mixologist Luke Whearty through Australia to France. Set out in his mother’s birthplace with the No. 17/18 Cyprus Hill, a refreshing cocktail of fresh fruit and floral elements from figs, mandarins, and jasmine. Adopting the name Moscow Mule, yet resembling nothing like it, try this eclectic mix of Kvass (a traditional Slavic beverage), blackcurrant juice, and dark rye.

Hina Matsuri returns to Mikuni
Back by popular demand for its sixth edition, Mikuni once again heralds the time-honoured Japanese festival with a luxurious bento set ($120++) crafted by Executive Chef Keisuke Uno. True to the spirit of the Doll’s Festival, the delicate bento presents nine dishes adorned with pink and floral garnishes, and starts with a decadent Foie Gras and Hokkaido Seafood Chawanmushi. This follows with other elegant flavours: a Miso-marinated Black Cod, Japanese Plum Jelly Sasamaki-fu, as well as fresh, delicate Otoro, and the finest A5 Miyazaki Beef Sirloin, lusciously marbled and seared.

Seafood Royale Fair at Lewin Terrace
Everyone knows that Japan’s seafood is often unparalleled, but what happens when you put those ingredients in the skilled hands of Japanese-French restaurant’s Chef de Cusine Hiroyuki Shinkai? Find out at the Seafood Royale starting Thursday, as a small selection of fresh seafood is flown in from the famed Miketsukuni region. Their Hassan Tasting Platter ($68++) sees dishes like Ama-ebi in Kumquat Shell (prawns from Fukui), Semi-cooked Sous Vide Octopus (from Hyogo prefecture) topped with pickled vegetables and Jerusalem artichoke, as well as an Ise Bay Lobster Thermidor (from Mie prefecture).

A New Ramen Keisuke Concept Arrives From Ginza
Singapore’s ‘King of Ramen’ Keisuke Takeda is launching the city’s first dedicated duck ramen restaurant – a concept previously established in Tokyo’s Ginza since 2015. It’s an uncommon ingredient in Japanese cuisine, but the French-trained chef has no qualms turning duck into his muse. Pick from five ramen choices, including two variations of duck broth ($14.90 – a Clear version made by boiling a whole bird, and a Rich, milkier one made with chopped duck), and a Spicy Miso ($16.50) variant.
Each bowl is served with slices of premium Irish hybrid duck that’s grilled, marinated in Keisuke’s special sauce, and then steamed for an immensely juicy bite.

Shake Shifters #001: Potato Head Singapore x Appleton Estate Rum Takeover
Potato Head Singapore’s Studio 1939 will be the stage for a month-long ‘takeover’ by Appleton Estate Rums, as guest bartender Divyesh Chauhan (Appleton Estate UK Bartenders Challenge 2010 winner) shakes off the timer this Thursday alongside Head Bartender Jon Emmanuel. Priced from $18 a cocktail, the menu sees drinks such as The Signature, a concoction of Appleton Signature Blend, espresso liqueur, and maple syrup served in a couple and garnished with coffee beans, as well as the punchier Dr. Wary, which combines Wray & Nephew Overproof Rum, Appleton Rare Blend, pineapple rum, lime juice, and agave syrup.
