Debuting at this Melbourne-inspired hangout, diners can look forward to an artfully-created 4-course menu which fuses the best of local and Australian cuisine. Each dish is paired with fine wines from Down Under, complementing the vibrant flavours unique to each.
Start the Aussie-Sing journey with an inventive rendition on the local favourite, Laksa from Downunda – pan-grilled king prawn, avruga caviar, coconut-crab emulsion, laksa leaf, chilli oil and jicama slaw, refreshingly-paired with the2011 Yering Station Little Yering Chardonnay, a light-bodied white wine with a crispy lemony finish.
Imaginative creations include the Hainanese “Chook” Chicken Rice – poached lemon myrtle free-ranged chicken on dukkah risotto, quail egg and ginger-chilli gel and Skippy the Kangaroo Rendang – barbequed rendang crusted kangaroo fillet, served with spiced kaffir lime espuma, fresh avocado and corn salsa.
The meal ends on a high with the Spunky Pandan Lamington featuring an inviting pandan Lamingtons sandwich, red bean semifreddo and Vegemite chocolate ganache, paired with a delicious, fruity 2013 Pirramimma Late Harvest Riesling.
The wine dinner is priced at $88 nett per pax, and is available on 27 February 2014, from 7pm onwards.
