Their oyster-infused sourdough pastas are also a must-try, silky and flavourful with a pleasant chew – have it with a rich crustacean broth in the Luxe Hae Mee Tng (S$22).

Garum Goodness at Wildfire

A beef garum-infused USDA Black Angus patty is the star of Wildfire Chicken & Burgers newest Garum Burger (S$13). Specially created for Wildfire by Chef Remy Lefebvre from Butcher’s Block, the garum is a labour of love, with six weeks needed to ferment and process, and a kilogram of beef – off cuts and trimmings are used in a bid to remain sustainable – rendering just 200ml of sauce. Wildfire’s garum is made with 90% grass-fed Irish beef, paired with a high-grade USDA Black Angus patty and tangy tamarind BBQ sauce for ultimate flavour. This is one burger you don’t want to miss.

Wildfire Chicken & Burgers is located at 80 Bencoolen Street #01-15, Singapore 189655, p. +65 9198 2673. Open Mon — Fri 11am — 3pm and 5pm — 9pm, Sat — Sun 11am — 9pm.

New-Italian Flavours at Caffe Fernet

New takes on classic Italian cuisine at the heart of Caffe Fernet’s new menu developed by Executive Chef David Tang. Local and seasonal produce is highlighted in dishes like the Pompano Piccata (S$42), an Ah Hua Kelong-sourced golden pomfret pan-seared and served in a vibrant piccata accented with briny hits of trout roe. Their updated Aperitivo menu also promises a new-Italian drinking experience. Opt for one of their four Negronis, each of which is subtly different by using different gins and bitters.

Caffe Fernet is located at Customs House, 70 Collyer Quay #01-05, Singapore 049323, p. +65 9178 1105. Open Mon — Tue 4pm — 10.30pm and Wed — Sun 12pm — 10.30pm.

Taste The Big Apple At Manhattan

This New-York themed bar unveils its third menu, New York Personified, casting a spotlight on the lives of iconic Manhattanites in music, film, fashion, and more. Jazz giant Ella Fitzgerald inspires Harlem Nights (S$25), a take on the Gin and Tonic Spritz, a staple tipple of Harlem during the jazz renaissance. A blockbuster favourite takes cocktail form in 3000 (S$26), inspired by Robert Downey Jr’s heartbreaking “I love you 3000” in Avengers Endgame. The tipple draws on his favourite flavour of Neapolitan ice cream, and the kicker? Strawberry dust in the shape of Iron Man’s arc reactor.

Manhattan is located at 1 Cuscaden Rd, Level 2 Regent Singapore, Singapore 249715. Open Tues — Sat 5pm — 10.15pm and Sun 12pm — 3pm for cocktail brunch. For reservations, email manhattan@regentsingapore.com.sg or call +65 6725 3377.
