As far as food events in Singapore go, the World Gourmet Summit is one of the most extravagant, having run for over 20 years and attracted hundreds of international chefs, wineries, and Michelin-starred restaurants since its inception. But with all the star power going around, it’s easy to forget homegrown talents – chefs that have been around for decades trying to cement Singapore’s position in the culinary world – as well as local flavours that we’ve long come to cherish.

Xin Cuisine’s Royal Infusion Par-Tea
Indulge in an unforgettable tea-pairing dinner curated by Xin Cuisine Chinese Restaurant’s Chef Chua Yew Hock. Naturally, each dish is tastefully handcrafted with the finest premium ingredients, pairing a Tea-infused Rock Lobster with Lion’s Peak Dragon Well tea, Double-Boiled Monkey Mushroom Soup with Snowy Flake tea, Xin’s Signature Roast Duck with Pu Er tea, and plenty more one-of-a-kind combinations. Tóng Lè Private Dining’s World’s Finest Gastronomy present by Indoguna ft. Bíró Lajos & Ken Ling
A dinner focused on the world’s best produce, Chef Ken Ling will be joining hands with the ‘daredevil chef’ Chef Bíró Lajos to create a menu nonpareil. Age-long Chinese recipes by Chef Ling come together with Chef Lajos’s inventful European classics with a touch of elegance – as expected of the man who opened the first Chinese restaurant in Hungary. Dishes to expect include Bangalow Sweet Grain-fed Pork, Asparagus Cappuccino with Kaluga Queen 20 Years Vintage Beluga Caviar, and Pan-seared Game Farm Quail stuffed with Prawn Mousse.

Open Farm Community’s Farm-Fresh Cocktail & Culinary Experience
In modern Singapore, Open Farm Community is a timely response to the disconnect between restaurants and their produce. This dinner seeks to shine the spotlight on urban farming and sustainability, starting a talk by award-winning food garden specialists Edible Garden City, followed by a four-course dinner with cocktail pairing. Curated by Head Chef Russell Misso and Group Bar Manager Joe Schofield, the menu sees elegant produce-focused dishes like Textures of Potato (crushed potato, curry croquette, sweet potato and pepper puree), Confit Chicken Ravioli, Roasted Grey Mullet with White Carrot Puree and Charcoal Quinoa, and a Calamansi Sponge Cake with served with Bandung sorbet.

Mitzo’s Cocktail & Dim Sum Pairing Dinner
Breaking the mould of Chinese dining, Mitzo combines Cantonese cuisine with an artisanal cocktail programme. So if you’ve ever wondered how a har gow or char siew pao tastes like with a cocktail, this is it. Morsels is a place for fantastic ambience and even better food. Open Door Policy’s A Deliciously Gluten & Dairy Free Dinner
Open Door Policy (the sister restaurant of Open Farm Community) bust the myths of going gluten-free. Pick up some tips in the art of making gluten-free bread from Resident Chef Freddy Ang. This delicious gluten- and dairy-free four-course dinner promises to change the way you view healthy eating, with dishes like Sous-vide Veal Loin with Fried Bread and Tuna Sauce, Warm Wasabi Green Pea Scallop Soup, and Roasted Pork Rack with Five Spice. Song of India’s United Streets Food of India Dinner
Just a stone’s throw from Orchard Road, The Song of India is perhaps the ultimate luxury fine dining for Indian cuisine in Singapore. While the spotlight is usually on the cuisine of Lucknavi royals, this dinner sees the restaurant dishing the best of Indian street fare, albeit in a more elegant style. Journey through India with selections like steamed and tempered lentil cakes – a favourite from Gujrat -, lamb trotter masala soup from the chatori lane, Mumbai-style vegetarian burger, and chicken cooked the same way as it in Punjabi’s street.
