Lockdown Booze-up: Cap Off Your Evening With CÉ LA VI’s Bubbly Sunset Cocktail

Perched high up on the 57th floor of the iconic Marina Bay Sands, CÉ LA VI’s Skybar is an outdoor oasis that offers sweeping views of the spectacular cityscape and serves equally stunning libations.

Skybar mixologist Andrew Hyman’s recipe for this layered beverage is ridiculously simple, involving just three quick steps. Made using gin, cinnamon syrup, orange juice and a splash of bubbly ginger beer, this sweet and spicy concoction captures the essence of a warm golden sunset in a glass. With our beloved bars closed indefinitely, there couldn’t be a better time than now to put your mixology skills to the test. Try your hand at shaking up Skybar’s signature cocktail, CÉ LA VI Sunset with Hyman’s recipe below:

Ingredients

Tanqueray London Dry Gin 30ml 

Aperol 10ml

Cinnamon Syrup 15ml 

Orange Juice 30ml 

Ginger Beer (to top off)

Method

Cinnamon Syrup

Step 1: Boil one cup of water with two cinnamon sticks to a boil and simmer for ten minutes.

Step 2: After removing the cinnamon sticks, bring it back up to a boil and add ¾ cup of sugar.

Sunset Cocktail

Step 1: Shake all ingredients except ginger beer.

Step 2: Pour into an ice-filled rocks glass and top with ginger beer.

Step 3: Garnish with Baby’s breath and dehydrated orange crisp (optional).
