For one night only on 27 November, Zafferano presents a 4-course dinner featuring the world’s best white truffles originating from Alba in Piedmont. The white truffle degustation experience is paired with exquisite wines from Gaja, a leading wine producer from Piedmont. Led by the Gaja family for 162 years, the producer is globally known – in particular, the red wines are renowned for their great structure, complexity and the unique Gaja-style elegance.

White truffles cultivated in Alba are highly sought after for its beautiful aroma and intense flavours. The ”white gold” delicacy grows deep in the forests of northern Italy, where the rich soil and climate of warm summers and cool winters provide unparalleled conditions for truffles to flourish.

Guests are welcomed with a selection of four canapés topped with freshly shaved white truffles. The pre-dinner snacks are paired with a light and crisp NV Legras & Haas Intuition Brut Champagne.

The indulgent dinner commences with the Uovo, featuring Yamanashi egg yolk adorned with sunchoke, black trumpet mushrooms and lardo di colonnata, crowned with white truffle shavings. The seasonal delicacy complements the luscious pairing of the egg yolk and cured pork. This flavoursome dish is presented with a 2017 Gaja Ca’Marcanda Vista Mare Toscana IGT, well-balanced with nutty and earthy notes.

The primi course presents a tantalising Risotto that showcases a melodious union of Parmigiano Vacche Rosse and black garlic, finished with petals of white truffles and gold leaf. The stunning plate is matched with an elegant 2016 Gaja Pieve Santa Restituta Brunello Di Montalcino DOCG, a smoky red wine that perfectly rounds up the rich, savoury flavours.

For the main course, relish the charcoal-grilled A4 Miyazaki Wagyu with black sesame and white radish. The buttery smoothness of the wagyu is a stellar match for the 2014 Gaja Sperss Barolo DOCG – the top Barolo from Gaja. Bold and intense, the dark garnet red wine dazzles with a bright intensity that melds into a delightful tannic finish on the palate.

The evening draws to a close with a classic pairing of juicy Black Figs and robiola cheese drizzled in acacia honey. The heavenly notes of milky robiola and sweet acacia honey are heightened with the intense flavours of Alba white truffles. Presented together with the dessert is the 2018 Gaja Idda Etna Rosso DOCG, featuring fresh crisp acidity and delicious red fruit flavours for a splendid finale.

The Alba White Truffle and Gaja Wine Dinner is available at Zafferano at 6.30pm on 27 November 2021, Saturday. The dinner is priced at $450 per person. Limited seats are available at an early bird price of $380 per person.
