Berries Crepe

Have you ever seen someone make a crepe? We know it looks hard, but it’s actually easier than you think. The best part is, you don’t need any fancy crepe makers or fancy equipment like that. If you’re able to whip up pancakes – crepes are essentially French-style pancakes after all – at home, then you’re pretty much good to go.

We’ve enlisted the help of Terence from The Daily Roundup – where they make tasty crepes and galettes – to teach us how to put together a sweet Crepe, topped with delicious berries.

Ingredients
Berries Crepe

  • All purpose flour (250g)
  • Milk (250ml)
  • Whipping cream (100g)
  • Sugar (75g)
  • Almond flakes (50g, lightly toasted in the oven at 160°C for 6 mins)
  • Icing sugar (25g)
  • Unsalted butter (20g)
  • Whole Eggs (3 eggs)
  • Berries of Choice (raspberries, blackberries, blueberries, strawberries)
  • Snow powder dusting

Method

Preparing the batter

  1. Start preparing the batter by whisking the sugar and egg together till fluffy
  2. Once it’s soft, pour in the milk slowly while mixing with your other hand
  3. Next, add in the flour, a little bit at a time while mixing, to avoid any lumps
  4. Pour the mixture through a chinois (or a sieve with a fine mesh)
  5. And that’s it; let the mixture chill in the refrigerator for 1 hour before using, so as to prevent shrinkage of the crepes

Whipping the ice cream topping

  1. Using whipping cream straight from the fridge (the colder it is, the easier and faster it’ll be to whip), add in the icing sugar and watch the cream start to thicken
  2. Whip the cream to a peak and put it in a piping bag

Making the crepe

  1. It’s crepe time! Heat up a lightly oiled frying pan over medium high heat
  2. Pour the batter on to the pan, with 2 tablespoons for each crepe
  3. Tip and rotate the pan to spread the batter thinly as possible
  4. Lightly brown both sides of the crepe for 20 seconds on each side
  5. Brush some melted butter on one side fold the crêpe into a semicircle
  6. Lightly brush with melted butter and fold the semicircle to a quarter

For the Berries Crepe recipe, decorate your fresh crepe with assorted berries, toasted almond flakes, ice cream, and whipped cream. Dust snow powder over if desired for presentation purposes, and you’re done.

Of course, you don’t have to stick to the toppings we suggested – feel free to go crazy with this one, whether it’s nutella, butter, maple syrup or even savour toppings like bacon and cheese. It’s a free world!
