Lockdown Cookup: Sink Your Teeth Into Rubato’s Delightful Impossible™ Burger

Love a good Impossible burger? Well, we’ve got good news – for a limited time, you can pick up Impossible meat packs from selected restaurants to craft your own scrumptious plant-based burgers at home. Part of a collaboration between Impossible Foods and their F&B partners, restaurants like Fatboy’s, Park Bench Deli, Rubato and The Goodburger will be reselling their inventories directly to consumers for the first time ever in Asia.

If you need a little inspiration on how to attain Impossible burger bliss, you’ve come to the right place. Divulging the recipe for his divine burger is Chef Marcus Edwin of Rubato Italian Kitchen & Bar. A champion of the farm-to-table movement, Marcus makes use of wholesome, organic ingredients to concoct the aptly named Heaven on Earth Impossible Burger. The result? A decadent plant-based burg that will mesmerise even the die-hard carnivores.

Ingredients (serves 2)

2 brioche or whole-wheat burger buns

280g Impossible™ Meat

2 tbsp organic goat cheese, crumbled (easily substituted with cream cheese)

2 tbsp Greek yoghurt

1 head butter lettuce

1 punnet organic alfalfa or radish sprouts

1 avocado, pitted and coarsely mashed

1/4 tsp freshly ground black pepper

1/4 tsp paprika

Method

Step 1: In a mixing bowl, thoroughly combine the Impossible™ Meat with the spices.

Step 2: Gently shape into two patties, about 2cm thick each.

Step 3: In a grill pan or over an open grill, cook over medium-high heat, about 30-40 seconds per side.

Step 4: Slightly toast the burger buns.

Step 5: When the Impossible™ patties are perfectly seared, gently place on a bed of avocado and top with yoghurt, cheese, lettuce, and sprouts.

Step 6: Enjoy immediately while hot.
