New highlights include:

Stuffed Boneless Roast Turkey ($388, approximately 4kg, serves 10 to 12 persons)

• A unique take on a ‘turducken’, featuring a ranch-raised US turkey masterfully deboned for effortless carving. At the centre is mix of shredded confit duck leg meat, roasted chestnuts, minced Italian black truffle, and truffle oil. Enrobing this filling is a second farce of minced marinated chicken breast, sautéed shiitake and button mushrooms, as well as leeks and onions.

Rustic Ossobuco Pie with Black Truffle and Foie Gras ($218, serves 6 to 8 persons)
• Encased in a flaky crust is slow-cooked beef shank elevated with a layer of black truffle paste and slices of duck foie gras – a nod to the classic ‘Tournedos Rossini’ steak dish named after a famous Italian composer.

Smoked Salmon Terrine ($168, serves 8 to 10 persons)
• Layers of dill-infused cream cheese, grilled zucchini slices, baked spinach, and tangy homemade balsamic ‘caviar’ pearls made with Balsamic di Modena and a hint of honey, all enveloped in applewood cold-smoked Norwegian salmon.
