Restaurant Review: Come For The View, Stay For The Squid at JING Seafood at One Fullerton, Singapore

Stepping onto the patio of JING Seafood at One Fullerton, we were greeted with the spectacular view of the skyline as day turns to night, the sky awash with hues of blue and the facade of Marina Bay Sands lit up and reflected on the glimmering waters. Undoubtedly one of our city’s top alfresco dining spots, JING Seafood offers a  one-of-a-kind dining experience in Singapore.
The restaurant offers both a la carte and set menus, the latter of which brings together some of the best of their offerings. With their wide assortment of seafood specialties, we were all too excited to sit down and try the six-course menu (S$320, feeds five) that had been customised for us. Prices mentioned here on are a la carte.
For seafood with a spicy kick, JING’s got you covered with their Grilled Squid with Butter and Minced Garlic (S$24), definitely one of our favourites of the night. The squid was a perfect amount of chewy, drizzled in a flavour bomb of a sauce that was buttery, salty, garlicky, and spicy in all the best ways.
Another must-try is their signature Sri Lanka Chili Crab (S$9 per 100g). The crab came cracked just enough that we didn’t have to spend too much time coaxing out the delicate meat, and the sauce was rich, sweet, and spicy. Their Fried Mantou were a perfect accompaniment to the dish, served hot and oh-so-fluffy on the inside, soaking up the sauce beautifully. We polished them off in seconds and had to ask for more!
Duck lovers will also be happy with their Peking Duck (S$38 for half, S$68 whole), with its characteristically crispy skin and tender, flavourful meat, and the Duck Meat, sautéed in spring onions and ginger in a white pepper sauce that beautifully cuts through the decadent and fatty meat. Need something to wash down the spice? Their decadent and silky Seafood Hor Fun (S$24 for small, S$34 for medium) is the perfect dish to slurp on, with soft noodles drenched in a silky smooth egg gravy and generous portions of seafood.
A relaxing dinner with a great view is made better only by a good drink, and so we tried their three signature cocktails, the Mojito, Singapore Sling, and the JING Fizz. The Fizz, while not fizzy as its name might suggest, was a citrusy blend of white wine, orange juice, and lemonade. The Singapore Sling was a touch too sweet for us, and the mojito a little too lime-forward, so we might recommend opting for a bottle of wine instead.
As the night drew to a close, we lingered over JING’s Delight, a chilled lemongrass jelly with aloe vera topped with homemade lime sorbet. This dessert was indeed a delight to eat, with the citrusy and fragrant flavours complementing each other in the best way, a light and ideal ending to a hearty meal.
