Guided by his Irish heritage, Chef Andrew Walsh highlights exceptional ingredients and culinary influences from the island. Highlights include the Aged Duck Ham – two-week aged Silverhill Farm Duck dried and brushed with Irish gin, then smoked with juniper berries – and a tender binchotan grilled Sanchoku A5 Beef Striploin with Irish whiskey pepper sauce. Citadelle Gin’s Latest Fruity Floral Twist

This summer, sip on the latest gin to launch in Singapore: the Citadelle Jardin d’été (S$82, 41.5% ABV). Created with a variety of fruits, herbs, and citrus meant to evoke a sensory stroll through a fragrant garden in the French countryside, enjoy this artisanal French gin neat, on the rocks, or in a martini. Celebrate this new launch at Raffles Courtyard from 22 July with a range of cocktails from the artisanal gin brand or head up to National Gallery to enjoy a refreshing pairing of handcrafted Citadelle Gin sorbets with Jardin d’été cocktails at Smoke & Mirrors.

Spend Eid al-Adha at Permata Singapore

Celebrate Eid with Permata Singapore’s outdoor carving station and their special Eid al-Adha Buffet (S$58 per person for lunch, S$68 for dinner). Dine at Gedung Kuning, a royal yellow historic mansion built in the late 1850s inspired by both European architecture and the traditional Malay house. New additions for the festive season include the Nasi Koma Koma – basmati rice enriched with saffron, pistachios, almonds, dates, dried fruit, and spices – and the Kambing Bakar, an aromatic roasted lamb served with a starfruit gulai sauce. Round off your Eid feast with their deliciously sweet Suji Keseri laced with cardamom syrup.

Celebrate Colombia’s Independence Day at CANCHITA

In celebration of Colombia Independence Day on 20 July, CANCHITA is serving up a slew of traditional Colombian grub. Begin the festivities with chicken soup Ajiaco Colombiano ($32++) stewed with potatoes and corn and served with avocado, sour cream, and capers. Next, fill up with the Bandeja Paisa ($38++), a full platter of pork belly, chorizo, beans, sunny side up egg, plantain, avocado, and rice. Wash it all down with a refreshing Aguardiente Capirinha ($26++), packed full of passionfruit and citrus flavours. Every feast should end with a dessert to match; their Tajadas ($16++) – sweet plantain slices served with cream – takes the cake.
