Can you believe that it’s already October? This month, we’re seeing plenty of new ventures by some of the best and most established names in the industry like FOC, SPRMRKT, Dehesa, and more. Look forward to trying a dessert restaurant, a highball mixer bar, a kebab bistro, and an exciting new addition to Sentosa’s dining landscape!
New Restaurants in Singapore
SPRMRKT Kitchen & Bar
Remember SPRMRKT, the retail-cafe space at McCallum Street? The folks there have just launched a new fine-dining concept called Kitchen & Bar in the idyllic neighbourhood of Robertson Quay. Beautifully designed in an unpretentious and welcoming kind of way, look forward to a more all-rounded dining experience – ‘glocal’ New American cuisine made with plenty of Asian ingredients.

FOC Sentosa
FOC Sentosa – conceptualised by celebrated chef Nandu Jubany, the same man behind FOC Hongkong Street – is the island’s new beachside restaurant and bar with a pool deck and alfresco lounge chairs overlooking the South China Sea. The thoughtfully-crafted contemporary Mediterranean dishes, comprise of cold and hot tapas dishes like the addictive Cod Fish & Spinach Caldoso Rice and Chicken Wings Sandwich, to pair with cocktails by award-winning mixologist Dario Knox.

Mercado
There’s a new Spanish joint in the CBD! Just like the traditional markets in Spain, Mercado dishes out hearty fare designed to nourish, boost, and satisfy. Ordering is simple: choose from a vibrant array of fresh and cooked ingredients at the counter to create your own bowl of happiness – think generous quantities of delicious meat and vegetables tinged with smoky paprika, hot chilli pepper, saffron, garlic, and other classic herbs and spices. In a rush? Ready-made Hola bowls as well as super fresh cold-press fruit juice are available for the taking. Head down at the end of the week for Sangria Fridays at only $8 per glass or $36 per jug.

Braci
Renowned restaurateur Beppe De Vito brings us Braci, a modern Italian restaurant and rooftop bar perched on a newly-restored heritage shophouse by the Singapore River. This exclusive hideaway – seating 16 in an open kitchen and 30 at the bar – uses charcoal (braci mean ’ember’ in Italian) as the primary method of cooking in its attempt to redefine and modernise classic Italian fare, particularly with the ever-popular Josper oven, together with the more unusual Japanese shichirin grill.

Janice Wong Restaurant
Chef Janice Wong is one of the most famous pastry chefs in the city, best known for her 2am:dessertbar at Holland Village. Now, she’s set up a 40-seater flagship space, Janice Wong Restaurant, at the National Museum of Singapore, comprising a retail store for her sweets and well as a dining area dishing out both savoury Mod-Chinese items (in collaboration with Chef Ma Jian Jun) and her wonderland of colourful, sugary treats. Over 70 types of sweets are available, including Marshmallow Paintings, Chocolate Bonbons, and even Chocolate Paint – 38 colours of edible art in a spectrum of flavours.

Pistachio Middle Eastern and Mediterranean Grill
Grilled meats are hardly what comes to find when you think of healthy food, but at Chef Khaled combines his decades of culinary experience with knowledge in Ayurveda and the Glycemic Index to create food with both nutritional richness and delicious flavour at s Pistachio Grill. Think popular Middle Eastern and Mediterranean classics with a contemporary twist. All dishes are made-from-scratch-fresh, and no trans fat or artificial ingredients are used.

Fat Prince
Put together dining experiences from the Eastern Mediterranean, Europe, and Ottoman Empire, and you get Fat Prince, a bistro-kebabery that contains the hipster vibes of bohemian Karaköy and the sensibilities of a Parisian café. The restaurant focuses on traditional Turkish dishes and flavours in modern interpretations, and is designed to create a social atmosphere in the middle of the city. Want to eat well, drink well, and frolic with friends and strangers? Fat Prince is where you can do all of that.

New Bars in Singapore
Highball
Bartender Kino Soh (Diageo World Class Singapore Finalist of 2016) has a refreshing new concept at busy Kampong Bahru. Featuring an all-female bartending crew behind the counter, look forward to simple and very affordable highballs (basically a spirit and carbonated mixer) that start from $10. In addition to the large collection of spirits on its shelf, Highball also has a darn cool ice ball making machine to minimise dilution in its drink!

Alchemist
From the same team behind microbrewery-pub Little Island Brewing Co. comes Alchemist Beer Lab, the first beer-infusion bar in Asia to house a staggering 16 state-of-the-art towers. Technically-advanced and sleek (gold and black marble with wood elements), the bar uses two cutting edge systems from Poland and USA which allows any type of ingredients into their infusions – fresh and down right tasty. Executive Chef John Edwards helms the kitchen, dishing out Modern European tapas to accompany your beer.

Red Tail Bar
With Zouk’s new digs along Clarke Quay comes its first restaurant and bar concept, Red Tail Bar, serving up progressive craft cocktails made with premium ingredients, quality wines, craft beers, and a wonderful away of delectable sharing-plates for those looking for some late night bites. This is where you’ll find the drama before the party starts.
