Serving up another outlandish new flavour experience is maverick chef Bjorn Shen with his brand new doughmakase menu at Small’s. His Bread Sushi Experience (S$165++ per pax) sees him marrying his dough-making knowledge with sushi techniques, swapping out the traditional rice in sushi with bread of all sorts. Some wacky bites to expect include lightly seared Engawa (flounder fin) laid on a bed of charcoal grilled bread, and Botan Ebi laced with dan dan and yuzu kosho.

Housed in a 700-square-foot space with pastel pink and blue interiors, the outlet features an open kitchen where foodies can watch chefs show off their skills and techniques.
