The Gems of DHM: L’Entrecôte French Bistro & Sabio Spanish Tapas

Singaporeans are fussy diners, we know at least that much. Not only does the food have to taste good, but the environment in which they sit in to enjoy their meal must make them feel good – so says Olivier Bendel, the founder of DHM (Déliciae Hospitality Management).

The group first burst onto Singapore’s F&B scene in 2010, and in only six years, it has brought a staggering 10 concepts to life around the city. And when it comes to creating concepts, DHM is all about creating unforgettable experiences for diners. Quality ingredients and cooking techniques, ambience and interior design – each factor plays a part to elevating the experience.

Their latest addition might be culinary TV host Angela May’s eponymous restaurant, to get a proper feel of DHM’s ethos, we have to look at the group’s earliest concepts:

The first restaurant by DHM is L’Entrecôte – The Steak and Fries Bistro, situated on the quaint cobbled streets of Duxton Hill. While the Parisian concept of entrecote (a premium cut of beef rib) and frites was established some eighty years ago, Olivier created his version of the French favourite.

Think the season’s best steak – the quality of the cut takes priority over the origin – paired with free-flow crispy golden fries, accompanied by a fresh green salad with mustard dressing and walnuts at an affordable price of $32.90. Each steak frites is doled out in two servings, with the second kept warm so you’ll get to enjoy your food hot. The L’Entrecôte experience isn’t complete without a generous dollop of its delicious secret sauce.

That’s not where it ends though. The L’Entrecôte Wine Bar next door offers excellent but affordable French wines, along with cheese, cold cut platters, tartines, and French specialities like Raclette, Pierrade and Fondue Bourguignonne or Vigneronne – fantastic for sharing with friends and family.

If you’re closer to the city, you’ll be pleased to know that there’s a sprawling outlet at the Suntec City. L’Entrecôte – The French Brassiere has all of the signature steak with fries and more, with mains such as the special L’Entrecôte Burger ($16). CBD folks, definitely go during lunch for their L’Entrecôte Set Lunch ($20.90) for the steak or the French Bowl Weekday Set Lunch ($14.90, includes French Bowl of choice, soup or garden salad and soft drink).

The best part? It’s Free Flow Wine Tuesdays from 7pm to 9pm at L’Entrecôte Wine Bar Duxton for $35++ and 1-1 Dessert Mondays and Thursdays, 1-1 Starter Tuesdays, 1-1 Beer Wednesdays, 1-1 Wine Fridays at Suntec City.

Sabio Spanish Tapas

In 2011, the group inaugurated Sabio Tapas Bar, a beautiful space with amazing Spanish tapas. Fusing traditional design with contemporary elements, you’ll find Catalan tiles and hand carvings next to Tom Dixon antler lighting and neo-industrial Sean Dix chairs.

Sabio’s extensive tapas menu features both hot and cold dishes prepared fresh everyday, and the traditional nature of the food together with the contemporary interior makes for a refreshing culinary experience. What’s more, the ambience is further enhanced in true Spanish style with an array of specially imported wine, beer, and spirits. In addition to wonderful tapas, Sabio has one of the best sangrias we’ve tasted, and also darn good churros at $11.

As an extension of Duxton’s Sabio, Sabio By The Sea on Quayside Isle has a similar but distinct approach, again fusing Spanish design with modern features. This time though, you’ll find a lighter palette and nautical details like marine ply and rope.

An advantage that Sabio By The Sea has over its mainland sister is the Josper Grill, a rare charcoal oven specially flown-in from Spain – this expands the original tapas menu by showcasing grilled meats and seafood such as El Pulpo ($24 – grilled octopus leg with violet mash potato). Don’t leave without a taste of Sabio’s famed Paella de Pescado ($29) – moist, flavourful, and loaded with juicy seafood.

The best part? Sabio Duxton and Sabio by the Sea are offering All You Can Eat tapas at $39.90 (daily except Sunday Brunch) and at $49.90 (daily except Weekend Brunch) respectively. For weekend brunch, Sabio by the Sea’s brunch set ($35) features the El Sabio Bread Basket, your choice of main, and a hot beverage.
