Lockdown Cookup: Travel To Thailand With Blue Jasmine’s Thai Glass Noodles Salad

Located in Park Hotel Farrer Park, Blue Jasmine serves up authentic Southern Thai cuisine inspired by the bustling culture of street food in Thailand. Chef Nipaporn, one of the Thai specialist chefs working there, shares that this recipe is one of her favourites. With essential Thai seasonings like fish sauce, sugar, and lime, this dish is sure to delight your taste buds with the flavours of Thailand.
Ingredients (serves 1)
80 – 100g glass noodles
½ a white onion
1 clove of garlic
2 sprigs of coriander
2 stalks of celery
1 tomato
20g black fungus
100g ground pork
1 tablespoon of fish sauce
2 tablespoons of sugar (1 for the pork, 1 for the sauce)
Juice of 1 fresh lime
1 teaspoon of dried shrimp
1 sliced red chilli padi
Salt to taste
White pepper
Method
Step 1: Boil the glass noodles for about 3 – 5 minutes and soak them in cold water. This helps stop the cooking process. Drain and set aside.
Step 2: Place the minced pork in a pot with garlic, white pepper, salt, half the sugar and just enough water to cover the minced pork. Boil until all the water is absorbed.
Step 3: Cut the coriander and celery into 1-inch pieces.
Step 4: Thinly slice the white onion.
Step 5: Cut the tomato into wedges.
Step 6: Boil the black fungus for 2 – 3 minutes, then drain and slice thinly.
Step 7: To make the sauce, add fish sauce, the remaining sugar, fresh lime juice, dried shrimp, and sliced red chilli padi into a bowl and mix well. Then set aside until needed.
Step 8: In a serving bowl, add the cooked minced pork, followed by the cooked glass noodles. Pour the sauce over and toss well.
Step 9: Add the cut vegetables into the bowl of tossed noodles and serve immediately.
Serve as a main meal or as a refreshing side dish. Chef Nipaporn also shares that the recipe is easily customisable, so feel free to swap out the ingredients for others – a common replacement for the minced pork are stir fried prawns!
