The Fat Kid Bakery

Just the sight of The Fat Kid Bakery’s bomboloni is enough to get our inner fat kid squealing. Run by self-taught baker Ariel Tang, her sourdough take on the Italian-style doughnut is slow-fermented for 72 hours. The result? Fat, chewy pillows of joy that ooze fruity cream fillings like CalamansiSummerberries, and Strawberry Shortcake (from S$14 for a box of four). Tea lovers can dive straight into the Earl Grey and Roasted Oolong – their bitter floral notes balance out all that sugary sweetness nicely.

Haritts Donuts & Coffee

If rich, heavy American donuts aren’t your thing, leave it to the Japanese to whip up a featherlight rendition. An import of the famed Tokyo brand, Haritts’ Japanese-style donuts are airy and noticeably less greasy thanks to flour imported from Japan, special kneading techniques, and shaping entirely by hand. The fluffy Original (S$2.50) needs only a delicate dusting of powdered sugar to have us swooning, while the popular Matcha White Chocolate (S$3.20) packs an astringent hit. We love the roasty sweetness of the Sesame Honey (S$3.20) too.

Ex-hotel manager-turned-baker Serene Tay dubs her bakes ‘Delish Hotel Pillow Doughnuts’, and the reason is clear – these bomboloni-style doughnuts are so bouncy they might pillow your head nicely. Her bestselling Durian Pengat pillows (S$28 for a box of ten) are a dream come true for durian lovers, silky with D24 durian pulp and coconut milk. Other dense-yet-soft classics include Passionfruit Mango, Matcha, and Nutella – if you prefer something tart, opt for the Lemon Cream Cheese (from S$22 for a box of ten).

Doughter Bakery

A home-based outfit helmed by a mother-daughter duo, Doughter Bakery is all about mochi. Their small-batch Mochi Donuts are as soft and gummy as they sound, baked to a crisp on the outside. Each is glazed with rich Belgian chocolate, then topped with crunchy bites like caramel crumble and Ferrero Rocher. While you’re at it, pick up their chewy Mochi Muffins – a set of three muffins and three donuts goes for just S$22.

Burnt Ends’ flame-kissed meats are the stuff of legend, but their bakes are now threatening to steal the spotlight. Besides some very tempting scones and sanger buns, their bakery dishes up brioche doughnuts with downright sinful stuffings. Enjoy your childhood favourite in doughy form with their Milo Dinosaur Doughnuts (S$24 for six) – these pillowy babies burst with Milo cream and Milo biscuit chunks. Fluff Bakery

While this Halal bakery is best known for their sweet, moist cupcakes, their donuts are by no means to be overlooked. PR manager-turned-baker Nursyazanna Syaira does bomboloni-style balls of goodness in a small range of rotating flavours – her current lineup includes familiar options like Chocolate Banana and Raspberry Ripple topped with milk crumbs (S$4 each). They sell out in a snap, as do her signature cupcakes – fabulously fluffy bites with fun fillings like Teh Tarik (S$4).

Flake

The flaky lovechild of a croissant and a donut, Flake’s cronuts are inspired by the Dominique Ansel creations that took New York by storm. Think crisp, buttery croissant layers cut in classic donut hole shape, piped with fillings within and on top. Flavours rotate seasonally, and they’ve been known to get funky with options like pineapple custard, eggnog, and even bolognese. Right now, their range leans easy-to-love with TiramisuHojicha, Blueberry Compote, and more.

Korio

Korio’s online pre-orders sell out at light speed, so you’ll really have to work for your dough fix. But it’s all worth it once you get your hands on their Brooklyn-style brioche donut rings – soft, buttery, and slathered with rich glazes. The 70% Dark Chocolate with Chocolate Pearls (S$5) is bittersweet manna for chocolate lovers, as is the milky White Chocolate Coconut (S$5) sprinkled with hazelnuts. Sourbombe Artisanal Bakery

Run by MasterChef Singapore 2018 runner-up Genevieve Lee, Sourbombe was a pioneer in crossing sourdough with bomboloni to make one tasty explosion. Her sourdough is fermented for up to 24 hours, then fried in coconut oil for a light, crisp exterior. Bite into one to set off a blast of molten goodness – the cult-favourite Basque Burnt Cheesecake (S$5.60) packs some funk with cream cheese and blue cheese, while the Thai Tea, Mango (S$4.80) features Thai milk tea blended with mangoes. The online store is currently on hiatus, but a brand-new physical store is slated to open this June.
