Bottomless Brunch in Singapore: LAVO Brings Out Italian-American Classics At Marina Bay Sands

Brunch with free-flow champagne is always great, but brunch with booze and a view? Even better. You might remember LAVO, that Italian-American restaurant and bar that opened in Marina Bay Sands last year. Known for their mega meatballs and decadent lounge parties, this glam rooftop destination launched its adults-only Sunday Funday Champagne Brunch ($98++ for just buffet or $158++ with free-flow alcohol) last month, and it’s quite the offering.

Perched 57 floors above ground, LAVO’s bottomless brunch experience starts the moment we walk through its doors. A massive parmesan cheese wheel greets us as a dedicated chef cooks up a plate of creamy linguine Cacio e Pepe, which he proceeds to drench in yes, more cheese. Alongside is an array of live stations, from Seared Foie Gras on apple chutney puff pastry to eggs done any way we want.

But we take a seat first, draining a soul-reviving glass of Veuve Clicquot Brut before launching into the food. After all, we’ve got half the afternoon to soak in the posh vibes — reclaimed subway tiles, leather booths, and antique mirrors. Champagne aside, you can enjoy endless pours of mimosa, Bloody Mary, Singapore Sling, beer, and house wine.

The Raw Bar is an icy visual spectacle, loaded with US and Irish oysters, snow crab legs, lobster claws, shrimp cocktails, scallops, mussels, yabbies, and middleneck clams (whew) on the rocks. Like your seafood cooked? The canapés of Charred Octopus with fennel will delight you as they did us, along with other things like Tuna Tartare and Eggplant Caponata with whipped goat cheese.

Brunch isn’t complete without carved meats, so we were generally pleased with their Roasted Pork Roulade, Broiled Beef Tenderloin, and Whole Roasted Free Range Chicken — lathered in things like red wine jus, horseradish cream, and signature steak sauce. Next, you’ll want to help yourself to LAVO’s greatest breakfast hits, such as a Wild Mushroom Frittata, thick-cut Apple Wood Smoked Bacon, and mini versions of their iconic Imperial Wagyu and Italian sausage LAVO Meatball.

In true Italian-American fashion, there are pizzas, and very yummy ones too. Piping hot from the stone oven comes all sorts of pies: Spinach and Artichoke, Margherita, Quattro Formaggi, and Salmon Oreganato. There’s a lot to choose from and the first two, while among the simplest, are the standouts. When you’ve had enough of the savouries, it’s time for dessert. By that we mean an entire assortment of petit fours, muffins, breads, cakes, and fresh fruits. And let’s not forget the shiny ice cream cart imported straight from Italy to bring you housemade Gelato and Sorbet flavours like Choco Alexander, Salted Caramel, Raspberry, and Yuzu Yoghurt. Really, you’ll regret not trying them.

Good enough for a small party or even a catchup with just one friend, LAVO’s vibe-dining brunch doesn’t disappoint. The 360-degree views are stunning, especially from the outdoor terrace, and the service is quick and attentive. Along with tasty food and generous variety of alcohol, you’ll wonder why their prices aren’t even higher.
