Restaurant Review: Famed L.A Chain Eggslut Brings Its Oozy, Fluffy Eggs to Scotts Square, Singapore

There’s only one place on earth where you could call us a slut and we’d happily agree. Eggslut first hatched in 2011 as a humble Los Angeles food truck, this sandwich chain has seduced fans from London to Tokyo with – you guessed it – its fluffy, silky egg creations. If you’ve queued at one of their 14 outlets worldwide, the egg-citing news is that it’s finally hit our shores. Eggslut’s first Southeast Asian outpost will open its doors on 9 September, right in the heart of Singapore’s Orchard Road.

It’s no secret what you’re getting at this restaurant: cage-free eggs all day, in every dish. Brought over by the SPC Group – the Korean conglomerate behind brands like Shake Shack and Paris Baguette – Eggslut Singapore serves up a menu nearly identical to chef Alvin Cailan’s LA original. Set on the ground floor of Scotts Square, this 50-seater is a spacious affair with floor-to-ceiling windows, long counter tables, and an open kitchen where the magic hatches.

The Slut

The defining dish at Eggslut is, of course, the Slut (S$11). Coddled egg is gently cooked in a glass jar till creamy and molten, together with a smooth, house-made potato purée and a sprinkling of chives. Use the crisp baguette slices on the side to scoop up the lightly peppery mash – it’s comfort in a jar.

Fairfax Sandwich

Eggs notwithstanding, the brioche that goes into Eggslut’s signature sandwiches is a star in its own right. Flown in from South Korea, these brioche buns are buttery and pillowy – well up to the job of holding together thick stacks like the Fairfax Sandwich (S$12). Here, scrambled eggs are stirred with butter to yield an oozy, runny mass, then blanketed with cheddar cheese, caramelized onions, and a kick of sriracha mayo. Talk about egg indulgence at its finest.

Bacon, Egg & Cheese Sandwich

Nothing spells rise and shine quite like a Bacon, Egg & Cheese Sandwich (S$12). This brekkie classic comes stuffed with applewood-smoked bacon, cheddar cheese, sweet chipotle ketchup, as well as an over medium egg. The latter, a firmer step up from eggs over easy, features a jammy yolk that’s still prone to bursting in your hands – get ready to get messy. For folks craving something meatier, there’s the Gaucho Sandwich (S$23) that features wagyu tri-tip steak slicked with intensely garlicky chimichurri. The sous vide steak is nicely tender, if surprisingly pricy – and for us egg lovers, it’s hardly the highlight here.

For sides, expect treats like the House-made Buttermilk Biscuit (S$6) – a fluffy biscuit that leans too salty for our tastes. The giant Salted Chocolate Chip Cookie (S$3.50), though, is a winner with its delicious balance of crisp crust and chewy, gooey insides.

To wash it all down, you’ll find a small drinks lineup featuring collaborations with local breweries. Brewlander has created an exclusive pair of craft sodas, the Elderflower & Lemon and Grapefruit & Ginger (S$4.50) – both remarkably light, clean, and sweetened with Stevia. Cuppa-wise, there’re hot and cold brews from Common Man Coffee Roasters to perk up your eggs-perience.
