Dig Into Spring’s Marquee Dish at Solo Ristorante

As spring draws to an end, it’s still not too late to dig into some asparagi bianchi as Chef Simone Fraternali launches an exquisite Five-Course Degustation (S$158++), and a vegetarian Four-Course Degustation (S$98++) in “A Celebration of White Asparagus). Featuring creamy Asparagi with sea urchin and herbaceous tarragon sauce, indulgent Uovo with white asparagus fricassee, and Tortelli with spiced butternut and 25-year-aged balsamic, Chef beefs it up with a light Spigola in a green pea broth with clams or a nutty Vitello spiced with mustard. End it all with a well-balanced masterpiece of a dessert: Tè Verde, made with white asparagus gelato.
